Tuesday Already.......

I can't believe it is already Tuesday. Time is really flying this month. Before we know it Christmas will be here. I am not finished with shopping. This month has always been hectic for me. My husband's birthday is this month before Christmas and our wedding anniversary too. So I always get stumped in getting him presents. Birthday + Anniversary + Christmas = One bald headed woman. lol. I feel like pulling my hair out. lol It will come together, it always does. I plan on making homemade tamales this coming Saturday. I always love making those during the Christmas Family get together.
I have already pulled out my bigger jeans because I know it's coming with all the food I will be cooking and I know where it's going. lol. Since I am discussing food I thought I would share a recipe with yall today. This is easy to make and it would be a great gift giver to friends and neighbors an of coarse family. lol. We can't leave family out. lol Ok here ya go, yall have a blessed day!

Old-Fashion Peanut Brittle

3 cups of sugar
1 1/2 cups water
1 cup light corn syrup
1 pound raw, shelled Spanish peanuts
2 Tablespoons soda
1/2 stick margarine
1 teaspoon vanilla
Boil sugar, water an corn syrup in a non-stick pot until it spins a thread (290 degrees). Add peanuts and stir continuously until syrup is light golden brown. Remove from   heat and add soda, followed by margarine, then vanilla; mixture will foam. Stir until margarine melts. Pour onto 2 baking sheets 10x14 with sides . Let cool before breaking into pieces. Candy stores best if wrapped in plastic wrap.
Yield : 3 pounds. I love putting mine in decorative Christmas tins to give out.

Oh, you are too cruel...I mean kind to give us a peanut brittle recipe!! I just love the stuff. I have to speed by it at the grocery store! I will treat myself to this over Christmas break....now, where did I put my bigger jeans?

Much like you..I always get so stressed this time of the year too. Always worried about where the money for gifts will come from and how it will all get done. Yet somehow it always does. And whatever it may have been that didn't get done...well..I sure don't remember now!!! This year I said...I'm not going to stress..just sit back and enjoy the splendor with my five year old. So far so good..ohhh..and my shopping isn't done either!!! Katie

I know I am so cruel. lol. I love that stuff myself. I told myself I would make all this wonderful sweet stuff this month and then I would work on my weight again. I just can't help it if I get alittle more fluffier lol. Do you remember the candy "Devinity? Not sure if I spelled that right, but that stuff is awesome too. My Mother use to make that when I was a little girl at Christmas. Going to share that recipe tomorrow. You can color it different colors. Yum. lol. Ok now I got a sweet tooth tonight. lol. Katie you sound like me so much. Every year I told myself not to stress and to just enjoy the month and what gets done gets done. So when I start shopping it gets crazy on me. This year I finally stuck to my guns. I made a list and told myself I would not over do it or over spend. So I am proud of myself on that. We have been trying to watch a Christmas movie a night. It has been really nice. I just want to enjoy my time with my kiddos too. Before I know it they will be grown and out of the nest. Every minute counts. Thanks so much for stopping by today. Dena thanks for the recipe!I love peanut brittle but have never made any for myself(always relied on my sister). I think I may just have to try it.I haven't even bought that first gift.Yikes guess I know how I will be spending my weekend.Hugs,Jen

Try to relax, it's the holidays after all. Lists are the key! If I make a list each day of the things I absolutely positively HAVE to get accomplished for the day, I have a much better chance of actually getting them done. And I'm less stressed out.
